Rough Rice

Our story

nipaluna, lutruwita (Hobart, Tasmania)

Rough Rice is the work of Adam James: self-taught cook, fermenter and lifelong experimenter. Born in Melbourne and raised across Chicago, Beijing, Moscow, Adelaide and Paris, Adam now lives and works in nipaluna, lutruwita / Hobart, Tasmania.

Adam established Rough Rice as a fermentary and research-led food project, drawing on traditional preservation methods from around the world and adapting them to local, seasonal produce. Alongside his products, Adam continues to teach, collaborate and develop waste-reduction projects, including work with The Agrarian Kitchen, MONA and Future Food System.

Fermentation-Led Craft. Adam’s work is grounded in traditional and contemporary fermentation techniques and research, shaped by international study, hands-on experimentation and years of teaching preservation practices.

Local, Seasonal & Nutrient-Dense Food. From his beginnings at Hobart’s tricycle café to his current product range, Adam focuses on simple, flavourful foods that prioritise nutrition, seasonality and thoughtful sourcing.

Sustainability & Waste Reduction. Adam's practice is closely tied to sustainable eating and zero-waste food systems, with projects spanning food waste reduction strategies, fermentation programs, product design and creation.
