Our story

Paekākāriki, New Zealand

Apostle began in 2018, when Lydia and Mat moved to Paekākāriki on New Zealand’s Kāpiti Coast. Mat had spent years experimenting with sauces, ferments and spice mixes, and the local village market became a way to share his homemade creations with their new community. Encouraged by a warm response, the pair turned their hobby into a business in 2019, bringing together Mat’s love of bold, balanced flavour with Lydia’s background in graphic design.

Inspired by the diverse culinary landscape of Aotearoa, Apostle uses quality ingredients like organic apple cider vinegar, cold-pressed New Zealand rapeseed oil, locally grown chillies and kawakawa from their garden. Each small-batch product is made to bring depth, heat and brightness to everyday meals, with hand-drawn labels that turn every bottle into a miniature work of art.

Circular Packaging System. Apostle encourage customers to return empty sauce bottles to retail locations, where they are washed, sterilised and reused, while their vinegar suppliers also operate a container reuse loop.

Local, Low-Waste Production. Apostle source locally where possible, using chillies from Ōtaki’s Penray Gardens, organic apple cider vinegar from Coral Tree Organics and homegrown Kawakawa leaves, while composting green waste and recycling cardboard.

Giving Back to Regenerative Projects. $1 from select sauce lines is donated to regenerative farming projects and local food security initiatives, supporting a more resilient food system.
