
O St. Recipe: Collagen Marshmallows
A delicious treat for skin and soul – made with gut-healing gelatin and beautifying collagen, gently sweetened with maple syrup and vanilla. A natural match for your next ceremonial cacao (or matcha)

Ingredients:

250 mls of filtered water

3 tablespoons of gelatin powder (60ml all up)

125g maple syrup

2 tablespoons of collagen powder

1/2 teaspoon of vanilla extract
Method:

Begin by preparing your vessel: lightly grease a baking dish with coconut oil, then line it with baking paper, leaving generous overhang on the side; this small detail will make lifting your finished creation a little easier.

In a small saucepan, pour in your water and gently sprinkle the gelatin over the surface. Let it sit and bloom for a few quiet minutes. Once softened, stir in the collagen, maple syrup, and a splash of vanilla. Place the pan over medium-low heat, whisking continuously for about 10 minutes, until everything melts into a silken syrup.

Transfer the syrup to a mixing bowl and let it cool just slightly; room temperature is perfect. Then, using an electric mixer on medium-low, begin to whip. Slowly increase the speed to high, watching as the mixture transforms, thick, glossy, cloudlike. This should take around 5 to 7 minutes, or until soft peaks hold their shape with poise.

Pour the marshmallow mixture into your prepared dish, using a spatula to smooth the surface. Set in the fridge and allow to chill completely. Et voila!
