Cherry, Coconut & Collagen Balls

Recipe by Lorna Garden ~ Mimo's Kitchen

These little balls of cherry ripe goodness bring together polyphenols from cherries and cacao, healthy fats and protein from almonds and coconut, and a spoonful of unflavoured collagen that disappears into the mix. They also make a great celebration treat for special occasions.

We use all organic or biodynamic ingredients.

Preparation Time:  40  minutes

Freezing Time: 2-3 hrs

Makes: Approx. 20 balls

Ingredients

Balls	Chocolate Coating
1 ½ cups almonds (raw or activated) 2 ½ cups shredded coconut 4 tbsp Imbibe Miracle Collagen (or your favourite unflavoured collagen) ¼ cup coconut oil 6 medjool dates, pitted 1 cup pitted cherries (fresh or frozen) ½ tsp pure salt 1 tsp vanilla extract or powder	1 cup cacao butter 2 tbsp raw cacao powder 1 cup shredded coconut (optional) 1 tbsp raw honey or maple syrup

Preparation

• Place all the ball ingredients in food processor and blend, scraping down regularly until well combined.
• Wet hands and roll mix into walnut sized balls.  Place in freezer while making the chocolate coating.
• Melt cacao butter, cacao, and honey/maple in pan over low heat, stirring regularly until melted but still thick.  Pour into large cup or small deep bowl.
• Using a skewer in the bottom, dip each ball into the chocolate mix until coated.  Alternatively if you’re time poor, simply drizzle the chocolate creatively over the balls.
